  传言“蘑菇要少吃”


  蘑菇味鲜营养价值也高,很多人喜欢吃,但是近期的一种说法却让不少人对蘑菇“望而却步”。


  一位自称曾游学苏黎世大学医院病理所的医生,接触到一位生化系名叫Guhl的研究真菌的博士。这名博士透露,蘑菇不可以多吃,每月最多可以吃200克,因为蘑菇对重金属富集的能力特强,几乎所有重金属,如铅、汞、镍,都会富集在蘑菇中,但人体却没有排出重金属的机制,久之这些重金属就会在肾小管内聚集,严重时甚至会引起肾小管的坏死。这名“医生”还称,看到新苏黎世报的一篇报道说,在乌克兰、德国切尔诺贝利核事故污染地区,专家开出的处方就是大力种植蘑菇,以富集被放射线污染地区的重金属和有害金属,使该地区恢复到污染前的水平。


  确实可吸附重金属


  记者了解到,在这则传言出现以后,江苏省农科院的食用菌研究专家特意对农科院种植的各种菌类进行重金属污染的调查,结果没有发现任何一个菌种出现重金属超标的现象。该省农科院专家介绍,虽然目前土壤中重金属污染相对严重,但是实际上很多人工栽培的蘑菇根本就不种在土壤里,而是利用秸秆等种植蘑菇,本身不接触重金属的土壤,因此蘑菇重金属超标的说法不适用这样种植的蘑菇。


  另一位中国食用菌专家表示,蘑菇是我们对可食用大型真菌的俗称,其中包括蘑菇、香菇、金针菇、鸡腿菇等等很多品种。“如果同样的土壤环境下种植,蘑菇的富集重金属的能力确实比种出来的蔬菜、水果要强。”


  北京市农业技术推广站蘑菇室主任邓德江表示,蘑菇确实有很强的吸附重金属的能力,野生蘑菇的金属含量肯定要高。不同城市的土壤中重金属的含量不同,因此不同城市的野生蘑菇的重金属含量高低也会不同。邓德江说,这个说法针对的应该是野生蘑菇,在土壤里吸收营养的过程中也吸收了金属。而我们现在吃的蘑菇,大多是人工栽培的,不会积累重金属。

  全部无土培植无重金属污染


  记者了解到,北京市场上的蘑菇都是人工生产的。邓德江介绍,现在绝大多数的菌菇类,如经常食用的金针菇、杏鲍菇等,是利用玉米芯、棉籽粒、麸皮等培育而成的“有机质”里种植,虽然蘑菇有“富集”的能力,但因为没有“供给”,也就不会产生吸附。而且重金属对蘑菇生长没有益处,所以也不存在人为添加问题。


  邓德江表示,蘑菇相比蔬菜和粮食更安全,因为蘑菇是菌类,栽培的全过程不用农药。2012年北京市食用菌生产面积3.26万亩,产量15万吨,生产量最大的为平菇和香菇。全部是实验室蘑菇,无土培植。
