  酒店低价转向普通消费者


  “推出亲民套餐,酒店也是深思熟虑了很久。”李小姐回忆。八项规定刚出台的几个月,餐饮行业内,不少从业者都以为规定只是开始比较严格,时间一长,便会有所松懈。如今,八项规定实施已有一年,酒店已经失去了一大半的机关单位客户,临近年关,“老客户”也少有回头。


  经过一段时间的市场调查,酒店高层判断,八项规定的执行会一直持续,酒店要生存,转型肯定也是必然。于是,酒店决心进行彻底的调整。“让百姓也能进五星酒店的大门”,李小姐说,酒店管理层提出了这样的理念,并从价格上进行了降价调整。


  调整菜品降低成本


  李小姐所在的五星级酒店,主要以粤菜和川菜为主。今年推出的降价套餐,仍旧按照以前的菜系设计,但减少了高档海鲜的使用。“在价格下调的同时,还要保证团年饭的质量,这是一件很困难的事情。”李小姐说。


  “这可以为酒店提供一个机会。”李小姐表示,如果能让大众不觉得五星酒店的菜贵,能多来酒店吃饭消费,未来酒店将拥有大众这块市场。


  北青报记者随后询问几家不同星级的酒店,酒店方均表示今年价格已做下降调整。一家四星级酒店表示,到目前为止,还没有机关单位找他们订餐。几家酒店均表示会按照百姓的消费来制定菜谱。


  “我们有不同价格的套餐,消费者出多少钱,我们按照价钱来制定套餐,酒水上我们也做了降价,一般都是大众能接受的酒,红白葡萄酒100到200元一瓶,这价格是大众都能接受的。”一家酒店的餐饮部人员告诉记者。

  高端餐饮业借“亲民”回暖


  自2012年底中共中央出台八项规定,期满一年。在中国烹饪协会副会长边疆的观察中,这一年中国餐饮业出现了很大的变化,“高消费得到了抑制,也带动了全社会反浪费、反腐败的风向”。

  边疆将过去的一年看作是餐饮行业的寒冬。在由中国烹饪协会发布的《2013年三季度餐饮市场分析报告》中,2013年1-9月全国餐饮收入18178亿元,同比增长8.9%,增速比2012年同期下降4.3个百分点。


  其中限额以上餐饮企业(年营业额200万元以上)收入5842亿元,仍处于负增长状态,下降幅度1.8个百分点。“这类企业在行业中约占30%左右,此前23年都保持增长状态。”边疆强调。

  面向大众转型

  “请领导吃饭,怕犯错误”


  在北京某区政府机关工作的刘先生也明显感觉到八项规定出台前后的变化。2012年末,刘先生和单位的同事在一家酒店开完年终会议,会后一起聚餐。没过多久,中央出台了八项规定,其他部门的类似会议被立马禁止。


  “区领导立马不再批准借公差出行的事项。”刘先生回忆。随后,市和区也在八项规定出台后相继出台了两份对八项规定的解读文件,详细解读了八项规定。“就是对八项规定进行了细化。”刘先生说。
