  据相关专家介绍,偶氮二甲酰胺具有氧化和漂白的效果,通常添加在面粉中作为增筋剂,加强面筋的弹性与韧性。联合国食品法典委员会(Codex)也将其列为合法食品添加物,例如我国台湾地区目前限量标准比照Codex的45ppm,即每公斤面粉添加不得超过45毫克。虽为合法使用,但若商家超量添加偶氮二甲酰胺,仍可依“食品安全卫生管理法”开罚3万到300万元新台币。

  北京店员不知偶氮二甲酰胺为何物


  昨日,北京青年报记者走访了赛百味国贸店、燕莎奥特莱斯店等,餐牌上写着顾客可选的面包品种有4个,分别是意大利白面包、全麦面包、奶香酪面包和蜂蜜燕麦面包。当有顾客询问店方“面包里有没有漂白剂”,售货员均表示并不了解偶氮二甲酰胺为何物,也未听说其在北美地区停用。文/本报记者 蔺丽爽

  针对偶氮二甲酰胺的不同观点


  美国:偶氮二甲酰胺通过美国FDA审查,属于“公认安全”的食品添加剂,面粉中的最大使用量是45ppm。


  英国:英国卫生安全局将偶氮二甲酰胺视为致呼吸敏感物,认为其在工作场所的存在可能诱发哮喘。含此物质的产品应标注R42标签,即“吸入可能造成敏感”。
