  白皙、鲜嫩的莲藕,常被人用来和美女的玉臂相比较。但很多人或许不知道当下这种又白又嫩的莲藕,可能是被美容过的。





  记者连日调查发现,莲藕市场上有一个几乎公开的秘密——拿柠檬酸美白莲藕,而且商贩对莲藕使用这种有防腐、保鲜效果的食品添加剂时,是毫无限制地“涂撒”。有人质疑,柠檬酸是食品添加剂,过量摄入会不会对人体有危害?

  一网友通过温州都市报微信平台发来信息:温州菜场里的藕很多是漂白过的,对消费者身体会造成伤害,请有关部门管理。





  连日来,记者走访了市区黎明路、蒲鞋市等地的菜市场,发现一些商贩用一种白色晶体的东西为莲藕保鲜,商贩称之为“藕粉”。





  在蒲鞋市农贸市场,一个菜摊上摆放着洁白的莲藕。





  记者问:你这里的藕怎么这么白?





  菜贩说:“我的藕是‘整’过的。”





  在该农贸市场的另一家菜摊前,记者看到该菜摊的莲藕表皮很脏,但价格却比白净的莲藕要贵,每公斤12元。





  摊主说:“白皙的莲藕用‘药水’泡过了,有一股酸味,不好吃的。我家的没有漂过,所以价格贵一些。”





  至于用什么“药水”浸泡?该摊主说,是一种白色晶体状的“藕粉”。





  而在市区黎明路农贸市场,同样存在摊主使用“藕粉”的情况。在调查中,当记者询问当天卖不完的莲藕怎么处理时?该摊主直言不讳地说:“当天卖不完的藕晚上用‘藕粉’泡一泡,明天可以继续卖,照样可以卖出好价钱,但泡过的藕有酸味。”





  有知情人士说,这种所谓的“藕粉”其实就是柠檬酸,工业柠檬酸是绝对不能使用的,但不知道菜贩是用食用级还是工业级的。

  温州菜篮子农副产品批发交易市场南首有专门的莲藕批发区。4月15日下午,记者以顾客的身份光顾该处。





  莲藕批发区有多家经营户,一些货车直接停在销售点,一边卸货,一边有工人戴着橡胶手套把莲藕放进一个白色桶中清洗。





  在一家莲藕批发点,记者看到清洗过的莲藕特别白嫩,用手摸了一摸,滑滑的。这时,记者看到另一名工人往刚洗过的莲藕上撒一种白色晶体状的颗粒物。在一堆莲藕旁,记者看到一个米黄色的袋子,里面装着另外一个袋子,袋中是一些白色晶体。





  “这些是什么东西,是莲藕洗白用的吗?”记者问。





  对此,该批发点的老板娘连忙说:“这是保鲜用的,用了卖相会好看一些。”





  “这些白色晶体状的是什么,不会有问题吧?”记者从袋子里掏出一点,用舌尖舔一下,顿感一阵酸苦,赶紧拿矿泉水漱口。





  随后,记者掀开内袋,看到外包装上写着“一水柠檬酸”的字样。





  4月24日下午,记者再次来到该批发市场,在另一家批发点,发现有工人不时往已清洗干净的莲藕上撒一些白色晶体状的柠檬酸。





  当记者表示要购买莲藕时,只见摊主取了一个大袋子就往里面装莲藕。当装了三分之一袋子时,记者急忙喊停:“够了,够了,太多了。”





  “没事,我给你加一些这个。”该摊主边说边从一个塑料袋里抓了一大把白色晶体状颗粒,撒在莲藕上,这些颗粒遇水就融化。





  摊主说,这些柠檬酸是保鲜用的,撒了柠檬酸的莲藕保鲜三四天没问题。





  当记者提出撒柠檬酸是否对健康有害时?摊主说:“没关系。有关系的话,他们(指市场管理者)不让放,(我们这里)有专门管理的。”





  不过,当记者离开时,该摊主却不忘提醒记者:“吃的时候,记得把(莲藕)皮削掉。”





  离开后,记者对刚购买的莲藕进行拍照。取莲藕时,记者手指触碰了融化的柠檬酸,液体渗入指甲缝,感到一阵灼伤感。





  记者调查发现,由于柠檬酸溶液具有刺激性,市场里的洗藕工人都是戴着手套作业。目前尚不知这些柠檬酸到底是工业级的,还是食用级的。但使用柠檬酸美白莲藕在该批发市场已是公开的秘密。

  莲藕销售时不能添加柠檬酸





  根据温州市市场监管局市场合同处提供的一份《食品添加剂使用标准》(卫生部2011年4月发布,该标准目前最新)显示,按添加剂的功能划分,柠檬酸分别出现在酸度调节剂和食品工业用加工助剂中。加工助剂是有助于食品加工能顺利进行的各种物质,与食品本身无关,如助滤、澄清、吸附、脱模、脱皮、提取溶剂等。





  根据规定,加工助剂一般应在制成最终成品之前除去,无法完全除去的,应尽可能降低其残留量,并不应对健康产生危害,不应在最终食品中发挥功能作用。





  温州市农科院食品科学研究所科研人员蒋巧俊的研究方向是食品贮藏保鲜。他说,莲藕清洗的过程可以勉强算加工环节,在这个过程中是可以使用柠檬酸的,但清洗完进入销售环节后,经营者就不能再往莲藕上添加柠檬酸了。虽然适当的剂量柠檬酸对人体无害,但过量对人体还是有一定的危害。





  浙江拓邦律师事务所主任薄士坤律师说,据食品工业用加工助剂使用规定,加工助剂一般应在制成最终成品之前除去。也就是说,在使用柠檬酸时,经营者应该要规范操作,不能滥用随意添加,并建立使用记录制度,以便职能部门随时监督检查,防止工业级的添加剂浑水摸鱼,危害消费者的身体健康。





  此外,薄士坤律师认为,根据相关规定,加工助剂应在食品生产加工过程中使用,使用时应具有工艺必要性。莲藕是否有必要使用柠檬酸“美白”。





  长期食用含柠檬酸的食品可能导致低钙血症





  据资料显示,柠檬酸作为食品添加剂,有调节酸味,防腐保鲜的作用,而在洗涤行业中也被用作洗涤剂。适当剂量柠檬酸对人体无害,在很多食品中都有使用。虽然柠檬酸对人体无直接危害,但它可以促进体内钙的排泄和沉积,如长期食用含柠檬酸的食品,有可能导致低钙血症,且会增加患十二指肠癌的几率。儿童表现有神经系统不稳定、易兴奋、植物神经紊乱;大人则为手足抽搐、肌肉痉挛,感觉异常,瘙痒及消化道症状等。
