  “3.15”前夕,前街一号记者以应聘小时工为由,进入该便利店。经过暗访调查,记者发现,该便利店员工把已经过期3天的便当饭菜加热后卖给顾客,还将当天未售出废弃的咖喱鱼蛋、关东煮,次日重新摆上柜台仍进行出售。此外,该店还存在监管漏洞、卫生条件堪忧等问题。


  1、过期便当加热后卖

  该店员工称,速食一般不会扔,也退不掉,次日只能再继续卖。因为节后外面很多店没开门,前两天卖的好,所以进的货多了,就挤压了下来。之前一天 就能卖出170多盒饭,每份10多元至20多元不等,还不讲其他的。当记者质疑,“米饭和菜都过期了,顾客吃了不会拉肚子吧。”“不要管那么多,店长都知道这事。”员工赶紧打断记者的话,“别说那么大声,让人听到就不好了,并表示不关我们的事,罚也是罚店长。”

  2月18日凌晨,一名员工让记者捞出当天没有卖出去的剩余关东煮料理,有鱼丸、海带丝、魔芋丝等,再把盛关东煮的锅清洗出来。把新的关东煮做好 加入汤汁后,再让记者把旧的关东煮倒进去。记者发现,新旧关东煮从外表上有明显差别,新的魔芋丝颜色发白,旧的颜色较重,新的鱼丸飘在水面上,旧鱼丸已经 下沉。

  而2月22日和之前情况一样,关东煮料理也有多个品种没有卖完,员工同样让记者捞出来,和新制作的关东煮次日一起卖。


  员工工资和消耗挂钩


  该店所有货物均坚持“先进先出”原则,新到的货物摆在后面,旧的、快过期的摆在前面,否则过期货物太多。


  该店员工称,有时候检查不到,就会出现过期食品,顾客如果买了会回来找事,所以验货时必须认真检查。而记者在上班期间,确实碰到过期的面包、饭团等货物,员工让下架后放入库房。


  “速食一般是退不掉的。”该店员工称,比如便当饭菜,关东煮等速食,公司规定每个月报损多少,如果超出,就要自己店负责。亏损多了,是和员工工 资相挂钩的,小时工还倒好一些,正式员工奖金什么的,肯定就会受到影响的。假如按公司规定,很多事都无法干,“培训是培训,要不亏损太大,扔的东西太多 了,那样会很浪费,大家都是睁一只眼闭一只眼。”


  该店早餐一般会提前做好。一名员工称,早晨5点半以后才让做,按规定不让做那么早,这个店货多,客流量较大,活根本干不完,所以就得提前做。店长来了也是不让做,但是他走了,该提前还是提前,活毕竟自己干,还不如早点干完,还能多休息一会儿。


  另外,该店存在豆浆加水现象,员工表示,一大袋豆浆,店长让加4杯水,掺匀后倒出来能装10杯左右再卖。“这个店还好些,对面那个店豆浆过期了也不扔,有时候都是自己喝。”


  2、卫生问题


  食材不洗便开煮 “这就够对得起他们(购买者)了。”


  在入职培训过程中,培训员工明确表示,关东煮食材必须要用水进行清洗干净,素菜用清水、凉水清洗;荤菜用温水、热水清洗。记者暗访过程中发现,便利店员工均未按要求清洗,有时候甚至不洗。


  2月18日凌晨,一名员工把袋装的10余种关东煮食材拿到柜台上说,“今天货物多,就不洗了,下次再说吧。”6点就有顾客来,还要把关东煮做 完,再洗就来不及了。并称,据她所知,好邻居便利店有的进行清洗,有的店干脆不洗。记者表示,不洗不脏吗?在记者再三坚持下,该员工称,“水龙头下冲一下就行,这样已经够对得起他们了。”


  2月22日凌晨,该店员工让记者制作关东煮,由于咖喱酱包之前冷冻在冰柜里,粘在塑料袋上不好倒出来,员工让记者直接把袋子扔在锅里,并提醒记者别让顾客看到,等加热后拿出来就行。


  一名业内人士分析,关东煮里面添加有防腐剂,有的食材保质期时间较长,如果不清洗干净,食用后会对身体有一定的影响。


  蟑螂餐桌上面爬


  好邻居便利店虽然坚持每天清扫,但卫生状况堪忧。记者暗访期间,时常会发现有蟑螂从卖便当的不锈钢餐盒上爬过,员工见怪不怪。每天,员工把白米饭和速食菜品,从柜子里拿出来后,大多都堆在地上,只有一层塑料袋隔着。


  该店由于加工间较小,一间不足几平米的屋子,里面堆满便当饭菜食材、厨具和多袋垃圾等,有的间隔不足1米,角落里还放有一瓶上面写着“敌敌畏” 没有开封的农药。员工坦言,垃圾并不是每天都倒的,一般三五天收垃圾的会上门回收垃圾,平时就放在库房里。对于“敌敌畏”的说法,该员工称,里面可能装的 并不是农药,而是驱除蟑螂的药,具体她也不清楚。


  不仅加工间,库房也是超负荷“运转”。便利店西南角是该店库房,里面除了存放散装的货物外,还有一间小屋子,平时放置废弃纸箱。记者暗访期间发 现,里面堆满了1人多高的纸箱,纸箱已顶到了天花板,员工还让往里塞纸箱,而灯管一直在亮着,存在安全隐患。记者再三表示,纸箱堆积过高,紧挨着灯管,可 能会引发火灾时,该员工才把库房的灯关掉。


  3、监管漏洞


  无健康证直接上岗


  记者面试时,培训中心员工告诉记者,要准备身份资料和食品方面的健康证,记者还没有办理健康证,最后也顺利通过。从入店上班到离店,记者和员工一样,准备快餐盒饭的饭菜,还有早餐和关东煮的制作等,但是该店从未要求记者提供健康证件。


  此外,员工在夜班准备食材和制作早餐时,记者发现,除了穿公司下发的红色马甲外,并没有戴一次性帽子、口罩和手套。


  有检查会提前通知


  关东煮料理摆放也有讲究,一般情况下肉食品放在外侧,顾客容易拿到的地方,素食放里面,这样以来,外面的价钱比较高,收益也好。该店一名员工称,她在便利店上班半年左右,晚上时间根本没人来突击检查,她也从来没有看到过有人检查。
