大连华星源祥和公司鱿鱼丝检出甲醛含量达96毫克/千克


法制晚报讯(本报暗访组)当地专门从事鱿鱼丝批发的人士称,鱿鱼丝最主要的问题是含甲醛。记者从北京山姆会员店、麦德龙十里河店、华堂商场丰台北路店、物美云岗店等处购买了7个厂家的9个批次鱿鱼丝,送往北京市产品质量监督检验院。


  检测发现,9个批次的鱿鱼丝甲醛含量全部超过了10毫克/千克,其中丰台子健超市销售的大连华星源祥和食品有限公司出产的百里鲜鱿鱼丝更是达到了96毫克/千克。


  上海海洋大学教授陈舜胜表示,甲醛是国家明令禁止添加到食品中的非食品添加剂,长期食用会对人体的消化系统造成刺激和损害。


  检测 9批次鱿鱼丝检出甲醛


  在山东龙口,法制晚报记者接触到了多名专门从事鱿鱼丝批发的商业人士。


  据他们介绍,鱿鱼丝加工生产工艺相对简单,技术要求也不太高。很多小食品企业都能加工生产鱿鱼丝,那里由于硬件条件差,结果造成生产卫生条件差。


  不过,他们认为卫生条件差并非鱿鱼丝加工生产的主要问题,甲醛含量过高才是。


  为了了解北京市场上正在销售的鱿鱼丝甲醛含量情况,记者分别在锦绣大地商务在线购买了申河散装“碳烤鱿鱼丝”,在北京山姆会员店购买了浙江富丹旅游食品有限公司生产的“手撕鱿鱼片”,在麦德龙十里河店购买了上海明奋实业有限公司分装的大鱼市牌“原味鱿鱼丝”,在华堂商场丰台北路店购买了辽宁大连昕昕食品有限公司的半岛小渔村牌“原味鱿鱼丝”等,总计8个厂家的10个批次鱿鱼丝产品,送到北京市产品质量监督检验院。


  除申河散装鱿鱼丝不符合送检要求,未能检测外,其余7个厂家的9个批次鱿鱼丝产品全部得到检测。


  结果显示,9批次鱿鱼丝产品甲醛含量全部超过了10毫克/千克。其中,丰台子健超市销售的大连华星源祥和食品有限公司出产的百里鲜鱿鱼丝更是达到了96毫克/千克。

  3企业数年前曾上北京黑榜


  《法制晚报》记者发现,其实早在数年前,大连华星源祥和食品有限公司、上海明奋实业有限公司、大连昕昕食品有限公司就曾因所产鱿鱼丝含不得检出的甲醛而被北京市相关部门通报,并下架产品。


  2009年11月11日,北京工商局通报称,大连华星源祥和食品有限公司生产的“华兴源”牌鱿鱼丝,因含甲醛被责令全市停售。


  2010年4月26日,北京工商局发布食品安全信息,欧尚丰台店销售的上海明奋实业有限公司于2009年10月31日生产的鱿鱼丝含有甲醛,被责令下架。


  2011年11月23日,北京食安办发布下架名单。其中,大连昕昕食品有限公司生产的3个批次的鱿鱼丝,含有不得检出的甲醛和山梨酸。且该厂生产的“半岛小渔村”牌原味鱿鱼丝(2011.4.11)中甲醛含量尤为高,达到了66.2mg/kg。


  至少8次通报鱿鱼丝含甲醛


  法制晚报记者还注意到,从2007年至今,北京食品安全办公室、北京工商局等至少8次通报鱿鱼丝中含甲醛的情况,并决定下架涉事产品。


  其中,老渔村远洋食品厂生产的“长河岛”手撕鱿鱼(2012.01.02)曾在3个月内两次被曝含有不得检出的甲醛。第一次为2012年6月27日,北京市工商局抽检中发现其含甲醛。


  2012年8月8日,北京食安办通报,“长河岛”手撕鱿鱼再次被检出甲醛,高达31.05mg/kg。


  通报称,甲醛是一种刺激性很强的化学物质,医学上用作防腐剂。在鱿鱼丝中加入甲醛可使表面增白并延长保质期。鱼干类食品用甲醛浸泡后,不仅经过漂白卖相好看,还不容易变质。


  国家明令禁止添加甲醛到食品中。长期食用含甲醛的食品会使得消费者出现头晕、头痛、乏力、嗜睡、食欲减退、视力下降等症状,对人体的消化系统造成刺激和损害。


  业内人士曾表示,“甲醛鱿鱼丝”拆开后往往会有一股异味,根本没有鱿鱼的鲜美和弹性。因此消费者如发现鱿鱼丝颜色异常亮白,应小心购买。


  部分鱿鱼丝含淀粉却未标明


  《法制晚报》记者还注意到,除了甲醛,9种被检测产品中还检出了淀粉。其中青岛北洋食品公司、天喔(武汉)公司、浙江富丹旅游食品公司所产的鱿鱼丝淀粉含量较低,为0.2%左右。上海明奋实业有限公司的大鱼市原味鱿鱼丝淀粉含量最高,为25.4%,占到了超四分之一。其次为大连华星源祥和公司所产的百里鲜鱿鱼丝,淀粉含量也达到了17.6%。


  添加淀粉,是制作工艺需要,还是有其他原因?


  中国农业大学食品学院副教授何计国告诉《法制晚报》(微信ID:fzwb_52165216)记者,鱿鱼制品含有淀粉的话,商家在配料表上应该标明有淀粉成分。如果没有标明,就侵犯了消费者的知情权。加淀粉主要是为了增加重量,对人体倒没有什么害处。


  据山东威海媒体报道,往烤鱼片或烤鱿鱼丝内添加淀粉,早已是行业内公开的秘密。“加淀粉主要是为了增重。相对于烤鱼片或烤鱿鱼丝,淀粉的价很便宜。淀粉添加多了,厂家的利润也就多了。同时,在这些干海货里加入淀粉,不仅可以增大产品吸水量和黏附性,而且由于淀粉糊化温度低,烘制过程中能够迅速成膜,在锁住水分的同时还能防止鲜味析出,保证口感。”


  《法制晚报》记者查看9款产品的配料表,发现大连昕昕所产“半岛小渔村牌原味鱿鱼丝”淀粉含量为16%,其配料表却并未标明含淀粉。上海明奋实业有限公司的大鱼市原味鱿鱼丝、天喔烤鱿鱼丝则注明了含淀粉或食用玉米淀粉。


  专家说法


  鱿鱼运送为保鲜 可能用甲醛


  3月26日,记者电话采访了上海海洋大学食品学院水产品加工及贮藏工程系主任、食品学院水产品加工及贮藏工程专业硕士生导师陈舜胜。


  陈舜胜表示,鱿鱼丝含有甲醛的情况比较复杂。他称,基本上所有鱿鱼自身都含有一定的甲醛,业内叫做内源性甲醛,是鱿鱼天然含有的甲醛,但这个量很小,对人体的危害很小。而业内最怕的就是后天添加的甲醛,这些制造商给鱿鱼添加甲醛的目的是为了防腐。


  陈舜胜说,常见添加甲醛的水产品就是水发鱿鱼和小银鱼。添加甲醛不仅能防腐,还能提升口感。


  陈舜胜称,我们平时所买到的鱿鱼制品都不是中国近海所产,大多是南美智利或北太平洋的鱿鱼。国产鱿鱼个头小,味道好,价格很高,做成鱿鱼丝成本就太高了。


  而南美或北太平洋的鱿鱼个头很大,但味道苦涩,一般都用来加工成鱿鱼丝。这种鱿鱼运到中国来时间比较长,为了在运输过程中保鲜防腐,就会用到甲醛。


  还有种可能就是这种鱿鱼的个头大,去皮比较麻烦,时间很长,有时候甚至会用到像洗衣粉的那种蛋白酶。各种化学制品的添加也有可能增加甲醛的含量。


  地方规定甲醛含量不大于10毫克


  陈舜胜告诉记者,甲醛是国家明令禁止添加到食品中的非食品添加剂,长期食用会对人体的消化系统造成刺激和损害。


  但对于鱿鱼含有内源性甲醛的问题,国内还有很大的争议,沿海几个省份也出台了相关的行业标准。像几年前浙江出台的“鱿鱼制品质量安全控制技术规范”里面就明确规定了,鱿鱼成品甲醛应小于或等于10毫克/千克,各地对鱿鱼丝中甲醛的含量也多是按照这个标准来执行的。


  对于企业能否提前处理掉内源性甲醛,陈舜胜认为,想去掉内源性甲醛比较困难,势必会增加企业的生产成本,另外也可能会影响口味。防止企业生产鱿鱼制品甲醛超标,主要还得靠严格的执法。日本如果发现类似的食物非法添加会让这些企业关门,而中国一般都是罚款了事,这势必让企业的违法成本降低。


  记者随后查阅到了这部“鱿鱼制品质量安全控制技术规范”,其为浙江省舟山市质量技术监督局于2008年出台的,其出台这部规范的初衷之一是因为“近年来鱿鱼制品中的‘甲醛超标问题’严重影响了舟山鱿鱼加工产业的发展”。


  甲醛添加于食品属于违法


  记者查阅了2015年10月开始实行的《中华人民共和国食品安全法》第三十四条,其中第一项就明确规定,禁止生产经营用非食品原料生产的食品或添加食品添加剂以外的化学物质和其他可能危害人体健康物质的食品。


  根据原卫生部《食品中可能违法添加的非食用物质和易滥用的食品添加剂名单》(第1—5批汇总),甲醛属于《食品中可能违法添加的非食用物质名单》之列,并注明,可能添加甲醛的食品品种包括海参、鱿鱼等干水产品。


  中国农业大学食品学院副教授何计国告诉记者,早在2004年,世界卫生组织就发布了“甲醛致癌”的公报,正式确定甲醛对人体有致癌作用,即便长期接触低剂量甲醛,也可引起慢性呼吸道疾病。
